I've found quite a neat wee application for Nokia phones including my n95. Sports Tracker uses GPS to track you when you're moving (walking/running/cycling/driving/flying) giving you your current speed, distance traveled, time spent and then at the end of your journey gives you various bits of information such as average speed, max speed and total distance and then lets you upload the journey to the sports tracker webpage which plots your route onto google maps along with all the other information gathered. It also lets you upload photos taken during the journey and put them at the correct places on the map. Lastly you can export the route to a format that can be used with other mapping programs.

It's more convenient if your phone has inbuilt GPS but you can use it with a bluetooth GPS receiver as well. Quite decent for a free app and if I can get hold of a n95 mount for my bike I may use it quite often.
